Moroccan is named after the Moroccan Room, which is what Mariah calls the top floor of her Manhattan apartment, because it’s Moroccan-themed. Scott is Nick’s middle name. As for Monroe, she’s named after Marilyn Monroe. She doesn’t have a middle name because Mariah doesn’t, either.
